1 lg sweet potato
1 Tbsp. Taco Seasoning
1 egg white (1 Tbsp. Extra Virgin Olive Oil can be substituted for egg white)
1 tsp. chili powder
1/2 tsp. garlic powder
1/4 tsp. fresh ground black pepper
Peel sweet potato and cut into thick fries. Mix egg white and spices in gallon size
Ziploc bag, add fries and shake to coat. Spread on baking sheet (I use a stone) leaving space between the fries. Bake at 400 for 20 minutes, stir/flip then bake 20-25 minutes more. Serve with Ranch or Bleu Cheese dressing for dipping.
Makes a ton and totals 4 points for the whole recipe, serves 2-3 depending on the size of the potato, so about 2 pts per serving.
